Chablis Fourchaume AC Chablis Premier Cru

A Chablis Premier Cru with a clear edge: dry, mineral, and tightly structured. The Fourchaume is one of the largest and best-known Premier Cru vineyards in the region. It is located on the right bank of the Serein, north of the Grand Cru vineyard Bougros.

The Chardonnay grapes grow on Kimmeridgian soil, the limestone marl with fossilized oyster shells that gives Chablis its characteristic stoniness. Baron Patrick bottles the 2020 vintage here. It shows straw-yellow with a golden shimmer in the glass. On the nose, apple, pear, and quince meet fresh citrus notes and a hint of flint. On the palate, it is racy and lively; the acidity is well-integrated and carries the complex structure into a long, mineral finish.

Recommendation: Serve at 10 to 12 °C with oysters and shellfish, grilled fish, or fried turbot. It also pairs well with creamy risottos and light poultry in a delicate sauce.
