Chablis 1er Cru Fourchaume Les Vieilles Vignes AOP
Fourchaume is one of the most famous Premier Cru vineyards in Chablis — and this Vieilles Vignes bottling from Pascal Bouchard clearly shows that old vines are working on a terroir they know inside and out. Ripe peach, white blossoms and a hint of melted butter characterize the nose, followed by a delicate fruit preserve note that signals depth.
Pascal Bouchard and his wife Joëlle — née Tremblay, from one of the pioneering families of Chablis — merged the winery in the 1980s from two family inheritances. Today it comprises 25 hectares, and their son Romain is gradually converting the vineyards to organic farming: no synthetic pesticides, exclusively organic fertilizers.
On the palate, the wine demonstrates Fourchaume's strengths: dense and rounded, with a vibrant acidity that adds tension to the opulent body. The finish is long and complex. Serving temperature: 10–12 °C.
Pairs well with lobster bisque, scallops with leek foam, or a robust Loire goat cheese. Also a good choice as a standalone white wine for a substantial aperitif.
