Cavezzo Pinot Bianco DOC Friuli-Venezia Giulia

A Pinot Bianco from the Collio with plenty of substance: full-bodied, carried by fresh acidity, and with a long finish. Cavezzo is a white wine that works just as well at the table as it does in the glass before it.

Livon manages vineyards in Friuli-Venezia Giulia. The grapes for this wine grow near Cavezzo (Ruttars) in the municipality of Dolegna del Collio, on marl and clay soil typical of the region. Fermentation takes place 20% in oak barrels and 80% in steel tanks at a controlled temperature. The wine then matures for around seven months in the same containers.

It shines straw-yellow in the glass with golden reflections. On the nose, acacia and jasmine meet apple, peach, and dried fruits, accompanied by a fine spice. On the palate, it feels round and supple; the freshness keeps the fruit in balance, and the finish remains long.

Recommendation: Serve at 8–10 °C. It pairs well with asparagus, fried fish, vegetable risotto, or mild goat cheese, and it makes a great companion for a dinner for two.
