Cabernet Sauvignon from Collio — that is not a matter of course. The region in northeastern Italy, right on the Slovenian border, is known for its white wines; that a red of this quality is produced here is due to the special soils around Ruttars in the municipality of Dolegna del Collio.

The Livon winery is one of the established names in Friuli-Venezia Giulia. The vineyards in Ruttars lie on marl and clay soils, which give the Cabernet Sauvignon an earthy depth that more Mediterranean growing regions rarely reach. The cooler climate of Collio ensures slow ripening and preserves the acidity structure.

In the glass, a deep ruby red appears. On the nose, blackberry and black currant, plus a hint of graphite and dried herbs. On the palate, medium to full body, firm, well-integrated tannins, lively acidity, and a long, slightly mineral finish.

Pairs with braised beef, leg of lamb with rosemary, or an aged Pecorino. Serving temperature: 16–18 °C.
