The Sugarille is the single-vineyard cuvée from Pieve Santa Restituta — a Brunello that shows the power of Sangiovese Grosso from one of the most coveted plots in Montalcino. Anyone who knows Brunello knows that the Sugarille site in the southwest of the growing region stands for wines with particular density and structure.

Pieve Santa Restituta has belonged to the Gaja family since 1994, who manage the winery around an 11th-century Romanesque church. The soils of the Sugarille site consist of Galestro and Alberese — the typical lime-clay-slate mixture of Tuscany, which gives the Sangiovese Grosso minerality and backbone.

In the glass, the wine shows deep ruby red. On the nose, blackberry, dried cherry, and violets, underpinned by tobacco, leather, and a hint of licorice. On the palate, dense but ripe tannins, lively acidity, and a long, spicy finish with notes of cedarwood and earth.

Best served at 16–18 °C. Pairs with braised beef shoulder, wild boar ragù with pappardelle, or aged Pecorino di Pienza. If you like, you can decant the bottle for an hour before serving — this opens up the aromas significantly.
