The Giusti "3 Gold Medals" is an Aceto Balsamico di Modena IGP from Modena, bottled in the angular Cubica bottle. Giusti follows a recipe from the early 20th century here: must of ripe grapes and raisins meets aged wine vinegar.

The balsamic vinegar matures for over 12 years in barriques and is enriched with vinegar from centuries-old wooden barrels. In the glass, it shows plum compote, red fruits, honey, and vanilla; the sweetness remains balanced.

Drizzle it over Parmigiano Reggiano, ripe strawberries, or vanilla ice cream. It also rounds off braised meat and risotto. Use sparingly and only add to the dish at the end.
