From four generations of baking tradition: the story of DESEO

Prato, a textile city between Florence and the foothills of the Apennines, is also the home of one of Italy's most significant biscuit crafts. Francesco Pandolfini grew up in this environment — his family has been rooted in the Tuscan biscuit craft for four generations and was associated with the historic Biscottificio Antonio Mattei, one of the oldest and best-known businesses in Prato. From this heritage, Francesco founded his own laboratorio in 2001: DESEO. The name says it all — Desiderio, the desire to translate one's own imagination into dough and aromas without restrictions.

An important chapter in the company's history was written in 2011 at the Speciality & Fine Food Fair in London, where Francesco met Audrey. She became not only his life partner but also the driving force behind DESEO's international growth: while Francesco is responsible for product development and the Italian market, Audrey builds exports and shapes the brand's visual identity.

Craftsmanship with attitude: raw materials, recipe, care

The business on Via Enrico Nesti in Prato works consistently without palm oil and without preservatives. The ingredients — including 100% Italian wheat flour, butter, and free-range eggs — are carefully selected and remain GMO-free. Cantuccini reimagined: the DESEO range

In the beginning, there was the cantuccino — the twice-baked, crispy almond biscuit that has been documented in Prato since the 17th century and is now listed under the protected designation "Cantuccini Toscani IGP." DESEO interprets this classic with its own accent: candied orange peel, slowly crystallized at a low temperature, replaces or complements the classic almond and brings a fruity, slightly bitter note into play. The version with pistachios and walnuts swaps the almond for two of the most aromatically full dried fruits in Italian cuisine — the result is a fuller, rounder bite with a distinct nutty note. Dark chocolate, in turn, creates a classic contrast of fruit and bitterness in combination with candied orange.
