Cardenal Mendoza has been one of the most well-known addresses for Spanish brandy for decades. The distillery is located in Cádiz, in the heart of the Sherry Triangle, where Oloroso and Pedro Ximénez casks do not need to be imported, but are available directly on site. This environment shapes every drop that is created here.
The heart of the house is the Clásico: 15 years of maturation using the Solera method, passed on cask by cask until dried fruits, vanilla, and a fine chocolate note combine into a round, warm whole. Those looking for a different character will find it in the Nebulis — smokier, edgier, another side of the same craft. The limited Elements Edition combines the maturity of the brandy with elaborate bottle design, for all those who also appreciate the exterior of a drop.
What all bottlings have in common: patience as a basic principle. Cardenal Mendoza does not rely on rapid maturation, but on time — and the result is a brandy that is convincing neat in the glass, but also goes well with dark chocolate or a ripe Manchego.
