Volcanic Hill Cabernet Sauvignon Napa Valley

The Volcanic Hill from Diamond Creek is a Cabernet Sauvignon with power and precision: concentrated, densely woven, and yet clear in its line. A dry Napa red wine for those who value structure and site character more than pure fruit fullness.

The single vineyard Volcanic Hill is located on Diamond Mountain in Napa Valley and is characterized by volcanic rock and iron-rich soils. These barren soils give the wine its backbone and its mineral tension. Diamond Creek is one of the pioneers of site-specific Cabernet in California and consistently bottles the wines separately by parcel.

In the glass, cassis, dark cherry, and blackberry appear, along with cedar wood, dried herbs, and fine spice. On the palate, the wine is concentrated and multi-layered, the tannins are ripe and tight-knit, and the finish is long and mineral.

Recommendation: Decant it an hour beforehand and serve it at 16 to 18 °C. It goes with entrecôte from the grill, braised lamb with rosemary, or strong mountain cheese.
