Valbuins Sauvignon Blanc DOC Friuli-Venezia Giulia

Sauvignon Blanc from the Collio, featuring clear herbal spice and juicy fruit. The Valbuins from Livon shows how much profile this grape variety can develop in Friuli.

The grapes grow in the Valbuins cru vineyard in Ruttars, in the municipality of Dolegna del Collio, on soils of marl and sandstone typical of the Collio. They are harvested by hand. After gentle pressing, the must undergoes cold maceration in the press and is clarified by cold settling. Fermentation takes place primarily in stainless steel tanks, with about 20% maturing in French tonneaux. After six to eight months of aging, the batches are blended and bottled.

In the glass, it is a bright straw yellow with greenish reflections. The nose shows green bell pepper, tomato leaf, white peach, and exotic fruit. On the palate, it is dry, fresh, and balanced, with a fine herbal note and lively acidity. Recommendation: Serve it at 8 to 10 °C with asparagus, fresh goat cheese, grilled fish, or pasta with herbal pesto.
