Silvaner Der Schäfer Reserve Retzstadt VDP.ERSTE LAGE QW Franconia

A Silvaner with structure and depth: The Schäfer Reserve 1G from Rudolf May stands for the serious side of the Franconian lead grape variety. It comes from the VDP.ERSTE LAGE Retzstadt Der Schäfer and carries the VDP.ERSTES GEWÄCHS designation.

The vines were planted in 1969 and take root in shell limestone, more precisely in wavy limestone. The yield is around 30 hl/ha, and the harvested grapes are correspondingly concentrated. After 12 hours of maceration, the must went into a new Doppelstück barrel, fermented spontaneously with wild yeasts, and lay on the full lees for 9 months. The wine then matured for another 9 months in a tonneau. The winery is certified as an organic farm.

In the glass, it shows quince, along with fine tannin accents that give the wine support. Dry on the palate, with a clear structure, complex, and carried by a long finish. The wood aging remains part of the overall picture without masking the fruit.

Recommendation: Serve it at 10 to 12 °C, for example with fried zander, sweetbreads, asparagus with butter, or aged mountain cheese. A large glass helps to open up the aromas.
