Sake Junmai Daiginjo Genshu 16%vol Japanese Sake - Milling rate 38%

A Junmai Daiginjo Genshu from Japan: sake in its purist form, without added neutral alcohol and without dilution with water.

The Akashi Sake Brewery is located in Hyōgo Prefecture. Here, the rice is polished down to 38% of its grain. The outer 62% disappear, leaving the starchy core, from which a particularly clean, fine style emerges. As a Genshu, the sake comes into the bottle at 16% vol and shows more density than many Daiginjo, without losing lightness.

In the nose, floral hints and bright fruit appear. On the palate, it appears silky, clear, and precise; the finish is fine and long.

Serve it well chilled at about 8 to 10 °C, in a slender white wine glass or a small sake glass. It pairs well with sashimi, scallops, or mild fresh goat cheese and is a good gift for everyone who drinks sake consciously.
