Sake Junmai 15%vol Japanese Sake - Milling rate 60%

A Junmai sake from Japan: It is brewed without added neutral alcohol, solely from rice, water, koji, and yeast. With 15% vol. and a rice polishing ratio of 60% (meaning 60% of the rice grain remains), it stands for a full, clearly defined style that accompanies food.

It is produced by the Akashi Sake Brewery. The name of the brewery refers to Akashi in Hyōgo Prefecture, one of Japan's most famous sake regions.

In the glass, it shows a mild grain tone and fine spice, along with a clean structure with a pleasant body. The finish is dry and clear; it supports dishes instead of overpowering them.

Serve it chilled for more freshness. Slightly tempered, it gains roundness. It pairs well with sashimi, grilled fish, yakitori, or tempura and is a solid introduction to the world of sake.

Akashi Sake Brewery

Japan's best sake brewery is located in a small port town on the Seto Inland Sea. Founded in 1917, the Akashi Sake Brewery has evolved from a soy sauce manufacturer into a cult destination.

The secret lies in perfect ingredients: Yamadanishiki, the king of rice varieties, and soft spring water from the mountains. Head brewer Kimio Yonezawa, eighth generation in his family, still stirs each batch by hand – a nearly extinct art.

The most famous sake is called Akashi-Tai . It tastes of pear and melon and has that smooth, umami-rich finish that connoisseurs around the world love. A piece of Japanese craftsmanship in a glass.
