Ragù bianco di chianina IGP
A ragù made with Chianina beef IGP – the Tuscan breed raised for centuries in the Val di Chiana and known for its firm, aromatic meat. The white version is made without tomatoes: instead, white wine and herbs define the flavor, giving the ragù a lighter, more delicate flavor than the classic sugo.
The meat retains a good bite during cooking – not a mush, but a sauce with texture. Serving suggestion: over wide pasta such as pappardelle or tagliatelle , as a filling for lasagna, or with polenta. A Tuscan red wine with acidity and body pairs well – a Chianti Classico or Morellino di Scansano will complement the meat's flavors without overpowering the delicate white wine aroma.
