Pago de Cirsus Single Estate is made from 100% Chardonnay grapes and, as the name suggests, is barrel-fermented. The grapes are harvested mechanically at night during the third week of August. Pre-fermentation takes place at 5°C. After fermentation, the wine matures for nine months in new French oak barrels made from wood sourced from the Allier forests. It has a brilliant golden-yellow color, and the intense aromas of tropical fruits, vanilla, and almonds make it a complex wine with an excellent balance between freshness and body. This wine pairs perfectly with seafood and shellfish, rice with roasted vegetables, white meat, and fresh, full-bodied cheeses. 90/100 Parker, 2015 vintage, Gold Medal Brussels
