Geltz/Zilliken Saarburger Riesling dry

A Riesling that shows what the Saar can do: cool minerality, precise acidity, and yet enough substance to hold its own at the table.

The Forstmeister Geltz Zilliken winery is one of the most significant addresses on the Saar — a tributary of the Mosel, known for particularly filigree, nervy-mineral Rieslings. The Zilliken family has been farming their sites for generations; the wines are made from certified organic grapes. The Saarburger Riesling dry is the entry-level wine in the estate's range — and no compromise.

In the glass, it shows the typical Saar signature: aromas of green apple, citrus zest, and a fine hint of white peach, underneath a clearly mineral undertone reminiscent of wet slate. The acidity is lively but not aggressive — it runs through the wine as a taut line and ensures a long, salty-fresh finish.

Served at 10–12 °C, it pairs well with grilled zander, river trout with herb butter, or a mild goat cheese. It also makes a good companion to Asian dishes with ginger and lime.
