The finch whisky distillery from Germany works with spelt as a grain base, a grain that gives the distillate a nutty, malty undertone and structure. The whisky aged for ten years in a port wine cask, hence the distinct fruit and sweetness.

In the glass, you will find raisins, dark berries, and caramel, plus nut and fine oak spice. The spelt holds everything together with its nuttiness, so the sweetness does not tip into the cloying. Give the whisky some time in the glass, then fruit and cask notes become rounder.
