The Sherry Cask Reserve #3 is a Yorkshire single malt that has matured entirely in first-fill Fino sherry casks. This is a rare orientation for Filey Bay, as Fino is the driest and most delicate sherry variant.

Behind the whisky is Spirit of Yorkshire, the distillery on the English northeast coast. Their style is light and fruity. The Fino casks pick up on this instead of overlaying it with heavy sweetness. It is bottled at 46% vol, without chill filtration and without coloring.

In the glass, gingerbread, candies, honeycomb, and toffee appear, carried by fine cask spice. The aromatics feel clear and lively, the spice remains delicate and dry.

Try it neat, at room temperature, and gladly with a few drops of water. It works as an aperitif and goes with salty, nutty companions like roasted almonds or aged hard cheese.
