Château Ausone Saint-Emilion 1er

Château Ausone is one of the few wineries in Bordeaux that has been working the same patch of land for centuries — and this patch is extraordinary: a steep south-facing slope of limestone and blue clay right on the edge of the historic city center of Saint-Émilion, named after the Roman poet Ausonius, who had his villa here in the 4th century.

In the glass, this Merlot-dominated red wine shows the typical signature of the Right Bank: dark cherry, plum, and an undertone of graphite and fresh earth. On the palate, dense but silky integrated tannins, a lively acidity structure that gives the wine contour, and a long, spicy finish with a hint of cedar wood and tobacco.

Best served at 16–18 °C. Pairs excellently with braised leg of lamb with rosemary, duck breast with truffle sauce, or a ripe Époisses. A wine for evenings where it is about more than just the food.
