A Pinot Noir from Collio that demonstrates why this cool, hilly region in Friuli is among the most interesting locations for red Burgundy varieties in Italy. Livon has been cultivating vineyards here for decades, benefiting from the proximity to the Adriatic Sea and the foothills of the Julian Alps – a climate that prioritizes elegance over quantity.
The grapes are hand-harvested and carefully selected, then gently destemmed. Temperature-controlled fermentation with skin contact and spontaneous malolactic fermentation result in a red wine with a natural structure: aromas of red cherry and raspberry, a hint of dried violet, and a slightly spicy earthy note in the background. On the palate, it is medium-bodied, with fine tannins, fresh acidity, and a clean, fruit-driven finish.
Best served at 16–17 °C . Goes well with pasta with duck sauce, grilled salmon or mild goat cheese – also a good accompaniment to risotto con funghi porcini.
