
Taralli con Peperincino
Taralli con Peperoncino from Laurieri — crispy pastry rings from southern Italy, seasoned with peperoncino. The Laurieri manufactory has been producing traditional baked goods for decades according to an Apulian-Campanian recipe: wheat flour, olive oil, white wine and chili, baked until they achieve their characteristic crunch.
In the mouth, it starts with a delicate saltiness, followed by a dry melt, rounded off by the lingering warmth of the chili. The texture is firm and crispy, unlike anything you'd find in industrial crackers.
A classic, neat aperitivo accompaniment — paired with a robust Primitivo or Nero d'Avola from Apulia. Also a good choice with mild ricotta or air-dried ham.
