Senda de Leñadores - Vino de Pago - Organic

The Senda de Leñadores — in English: “Luckjacks’ Trail” — is the flagship red wine of Pago Aylés, one of the few wineries in Spain with the status of Vino de Pago , the country’s highest quality designation. Only 15 wineries bear this seal, which requires a demonstrably unique microclimate and a clearly defined single vineyard site.

The winery is situated at an altitude of 700 meters on the edge of the province of Zaragoza, nestled in the barren, rocky landscape of Aragon. The calcareous and clay-rich soils, along with the cool microclimate, differ significantly from the surrounding vineyards—a combination that Federico Ramón recognized in 1994 and consistently developed. Shortly before his death in 2010, he achieved the coveted Pago status. Today, his children Ana, Inmaculada, and Federico Jr. continue to run the winery organically, together with oenologist Jorge Navascués.

In the glass, the Tempranillo displays a bouquet of ripe dark fruits—blackberry, black plum—with aromatic wood notes and a characteristic hint of eucalyptus. On the palate, it is full-bodied and powerful, with a spicy, lingering finish. Serving temperature: 16–18 °C. Pairs well with leg of lamb with herbs, Ibérico chorizo, or robust Manchego cheese.
