The Quíbia from Ànima Negra is a white wine outsider from Mallorca — mineral, spicy and significantly more distinctive than what one would expect from the island.

Ànima Negra is primarily known as a red wine estate that revived the almost forgotten Callet grape variety. The Quíbia demonstrates that this winery in southeastern Mallorca—in the Felanitx subzone of the DO Pla i Llevant—also has a clear stance when it comes to white wines: hand-harvesting, fermentation with natural vineyard yeasts, and no technical shortcuts.

In the glass, it displays a herbaceous spiciness reminiscent of rosemary and dried thyme—typical of vineyards with Mediterranean garrigue vegetation. These are complemented by tropical notes, a medium body, and a fresh acidity that keeps the wine lively. The finish is clean and slightly salty.

Serving suggestion: Well chilled at 10–12 °C. Pairs well with grilled octopus with bell peppers, goat cheese, or a salad with orange segments and fennel. Also convincing as a standalone summer evening wine — no accompaniments needed.

Ànima Negra

Ànima Negra – “black soul” – has been the conscience of Mallorcan wine since 1994. Childhood friends Pere Obrador and Miquel Àngel Cerdà founded the estate near Felanitx in the southeast of the island, on a property whose walls date back to the 13th century. Their goal was as simple as it was bold: to produce quality wines exclusively from native grape varieties, above all the then-forgotten Callet grape. With their breakthrough with international critics in 1997, the winery proved that Mallorca is more than just a holiday paradise – it is one of the most distinctive wine regions in the Mediterranean.
