Cudié represents one of Catalonia's most famous confectionery traditions: Catanias. Behind this specialty lies a simple yet precise craft—caramelized Marcona almonds embedded in a creamy praline filling and coated with a thin layer of pure cocoa.
The Marcona almond is no ordinary ingredient: it is considered the finest almond variety in Spain, flatter and rounder than its American relatives, with a buttery, mild aroma. Cudié uses it as the heart of his Catanias — the caramelization process gives it a light crunch that contrasts beautifully with the soft praline.
The result is a confection that lies somewhere between patisserie and confectionery: not too sweet, with a long cocoa finish. Perfect with an espresso after a meal or as an accompaniment to a mature Amontillado sherry.
