But the sailors tasted it and were amazed: the aquavit had transformed during the long voyage – smoother, deeper, more refined. Today, Arcus, based in Oslo, is Scandinavia's leading aquavit producer. Arcus from Oslo is no ordinary spirits producer – the story begins in 1805 when the Lysholm family sent a ship to the East Indies, loaded with Aquavit. The business failed, and the goods returned. But the sailors who tasted it on the return journey were amazed: the long sea voyage, the heat of the equator, the rocking of the barrels – all of this had transformed the Aquavit. Rounder, deeper, more complex than before.
This accidental discovery became a method. Even today, Arcus sends selected barrels on the so-called Linie aging process – a crossing of the equator and back, which gives the Aquavit a depth that no aging cellar can replace. The base remains consistently Norwegian: pure potato spirit from local potatoes, caraway as the aromatic centerpiece, and aging in sherry, port, or Madeira barrels depending on the style.
Anyone who previously only knew Aquavit as a schnapps for Christmas dinner will rethink their opinion with Arcus. The products from Oslo show what is inside this Nordic spirit: spice, warmth, a salty depth – and a travel story that you can feel in the glass.
