The Giusti family has been producing balsamic vinegar in Modena since 1605—longer than any other producer in the world. What began as a small craft back then is carried on today by the 17th generation, without much changing in the fundamental idea: grape must from Emilia-Romagna, slowly boiled down, then aged for years in batteries of oak, chestnut, cherry, and mulberry wood.
The barrels in the Acetaia Giusti are not props—many of them are centuries old and carry the aromas of countless vintages within them. The longer the balsamic ages, the denser it becomes: dark plum, dried fig, a hint of wood, and an acidity that never feels sharp, but rather round. The result is not a condiment in the supermarket sense, but a condiment used drop by drop—on Parmigiano Reggiano, with strawberries, over fried duck liver, or simply enjoyed on its own at the end of a meal.
