Acetaia Giusti was founded in Modena in 1605, making it the oldest balsamic vinegar producer in the world. For over four centuries, production has been in the hands of a single family – today, the 17th generation continues the legacy without changing the fundamental principles: slow aging, old wooden barrels, and no compromise on the raw materials.
The vinegars mature in casks made of various types of wood—oak, chestnut, cherry, mulberry, juniper—which give Aceto Balsamico di Modena its characteristic depth: dark fruit, a velvety-acidic balance, and a long finish with woody notes. Depending on the maturation time, products for everyday use are created, as well as dense, syrupy reserves for special occasions.
On Parmigiano Reggiano, grilled meat, or strawberries, it becomes clear why Giusti has been a benchmark of Modena's cuisine for centuries. Anyone who has ever tasted a mature Giusti balsamic vinegar immediately understands the difference compared to industrially produced products.
