
Pouilly Fumé "Le Champ des Vignes" AOC - ORGANIC
Pouilly Fumé is the classic territory of Sauvignon Blanc — and this “Le Champ des Vignes” shows why: fragrant, precise, with a lively minerality that makes the Loire wines of this appellation so distinctive.
Behind the wine are the brothers Yvon and Pascal Tabordet, who cultivate 8.5 hectares around Verdigny in the Sancerrois region – organically, as the organic label indicates. The vineyards in Pouilly grow on flint soils (silex), which give the Sauvignon Blanc that characteristic minerality that no other soil brings out so clearly.
In the glass, the wine displays elderflower and lemon balm, complemented by herbal notes and a salty, flinty finish. The body is full for a Sauvignon Blanc, yet remains taut and elegant – the acidity carries the wine without any harshness.
Ready to drink now and within the next two to three years. Serving temperature: 10–12 °C. Pairs well with Loire goat cheese (Crottin de Chavignol), asparagus with hollandaise sauce, or grilled sea bass with herb butter.
