Japanese Yuzu Vinegar
Yuzu is a Japanese citrus fruit whose flavor profile lies somewhere between mandarin, lime, and grapefruit – more intensely aromatic than any of the three. This vinegar distills precisely this profile: fruity and floral on the nose, with a bright, almost ethereal acidity on the palate.
Versatile in the kitchen: use it as a finishing touch over steamed fish or scallops, as a base for a ponzu dressing for sashimi, or sprinkle a few drops over stir-fried vegetables and rice just before serving. Do not heat – the volatile aromas will evaporate. Pairs well with a dry Junmai sake or a mineral Grüner Veltliner.
