A classic Sauternes from Barsac — the golden sweetness of the botrytis meets lively acidity, which protects the wine from heaviness.

Château Pebayle belongs to the Vignobles du Hayot , one of the most prestigious family estates in Bordeaux, with holdings in several appellations. The vineyard is located in Barsac , where the Garonne and the cooler Ciron rivers converge. It is precisely this temperature difference that creates dense morning fogs in autumn—the ideal conditions for Botrytis cinerea , the noble rot, which evaporates water and concentrates sugars, glycerin, and aromatic compounds in the grapes. Without this river, without this fog, there would be no Sauternes.

In the glass, the typical profile of the appellation is revealed: candied apricot, candied orange peel, and beeswax , underpinned by a hint of ginger and saffron. The sweetness is present, but well integrated by the freshness characteristic of Barsac—not a heavy, cloying dessert wine, but a wine full of tension.

Château Romer – Sauternes in family hands since 1851. That year, the Hayot family acquired the estate in Fargues, and shortly thereafter, it was classified as a Second Class Growth in 1855. The acquisition dates back practically to the very beginnings of Sauternes. In the mid-19th century, the late-harvest method was developed – by chance, through perseverance. The era of legend began. And the Hayot family has been there from the start. Today, Catherine and Fabienne du Hayot continue the legacy. Sauternes – a celebratory wine. With history, with attitude, with character.
