Since 1892, the Andrea Da Ponte distillery in Conegliano , one of the classic wine regions of Veneto, has been producing grappa using a method developed by the family itself. It was Mateo da Ponte, the founder's brother, who recognized early on that gentle distillation preserves the character of the raw material – thus establishing a method that became a model far beyond the distillery itself.
Prosecco remains the central focus: Grappas are produced from the pomace of Prosecco Superiore DOCG – the leftover grape residue from the region's finest vineyards – using the Da Ponte method. These grappas reflect the concentrated floral lightness of the Glera grape. They are not heavy, high-alcohol spirits, but rather a distilled image of the region: delicate, aromatic, and with a clear sense of origin.
Those who previously knew grappa as a rustic digestif will find a different approach here – one that puts craftsmanship and origin in the foreground.
