Conservas Emilia is located in Santoña, a small fishing village on the Cantabrian Atlantic coast, where proximity to the sea is not a marketing slogan but a defining aspect of daily life. Owner Emilia runs the business as a family enterprise and personally decides on raw materials, processing, and quality – without compromising on the selection of ingredients.
The centerpiece of the range is the Bonito del Norte , a white-fleshed tuna from the Cantabrian Sea, caught exclusively by rod and reel. This gentle method – one fish per hook, no bycatch – protects the stock and preserves the delicate texture of the flesh that distinguishes Bonito del Norte from ordinary tuna. It is processed according to time-honored traditions: filleted by hand, preserved in olive oil, and matured in the tin.
The result is a product that holds its own on the plate: on its own on toasted bread, with piperade, or as an accompaniment to a dry Basque txakoli. Anyone who has tasted canned goods of this caliber will never look at them differently.
