Japan's best sake brewery is located in a small port town on the Seto Inland Sea. Founded in 1917, the Akashi Sake Brewery has evolved from a soy sauce manufacturer into a cult destination.
The secret lies in perfect ingredients: Yamadanishiki, the king of rice varieties, and soft spring water from the mountains. Head brewer Kimio Yonezawa, eighth generation in his family, still stirs each batch by hand – a nearly extinct art.
The most famous sake is called Akashi-Tai . It tastes of pear and melon and has that smooth, umami-rich finish that connoisseurs around the world love. A piece of Japanese craftsmanship in a glass.
