The vines for the Jaspis wine have been growing on Jurassic limestone with a clay-loess-iron topsoil since 1958–1962—a soil that imparts a pronounced mineral tension to the wine. Spontaneous fermentation, extended lees aging in large wooden barrels, no fining, no filtration. This is not by chance, but by design.\u003c\/p\u003e\u003cp\u003e In the glass, this Pinot Gris reveals itself with substance: ripe pear and yellow plum, along with nuances of beeswax and flint. The palate is dense, the acidity clearly defined without harshness, the finish long and spicy with a hint of roasted hazelnut.
