Ancient dry stone walls retain the heat, and a pre-Christian prayer niche marks the centuries-old tradition of winemaking. Schwedhelm hand-harvests the grapes in two selection passes, leaves them on the skins for 18 hours, and allows for spontaneous fermentation—partly in oak barrels, partly in stainless steel tanks.
