The Waterkloof Circumstance shows what this grape variety can achieve when the soil and philosophy are right.

Waterkloof is located above False Bay near Cape Town, where Paul Boutinot found his dream terrain in 2002 after years of searching. Since then, the winery has worked consistently biodynamically: no chemical pesticides, but instead horn silica preparations and seven horses in the vineyard. Oenologist Nadia Langenegger and vineyard manager Christiaan Loots implement Boutinot's fundamental ideas — living soils as the basis for healthy vines.

In the glass, the Circumstance Mourvèdre shows dark raspberry and ripe blackberry, underpinned by eucalyptus and herbal notes that are reminiscent of the garrigue of the Rhône. On the palate, it is dry, with noticeable structure and a balanced finish in which the herbal nuances flash up once again.

Serving temperature 16–18 °C. Goes well with leg of lamb with rosemary, grilled merguez, or a strong goat cheese. If you like, you can let it age for another two to three years — the structure can handle it.
