They are harvested by hand. After gentle pressing, the must undergoes cold maceration in the press and is clarified by cold settling. Fermentation takes place primarily in stainless steel tanks, with about 20% maturing in French tonneaux. After six to eight months of aging, the batches are blended and bottled.\u003c\/p\u003e\u003cp\u003eIn the glass, it is a bright straw yellow with greenish reflections. The nose shows green bell pepper, tomato leaf, white peach, and exotic fruit. On the palate, it is dry, fresh, and balanced, with a fine herbal note and lively acidity.
