Eighty percent of the Chardonnay is fermented in stainless steel tanks, while 20 percent matures in French oak barrels—this allows the fruit to remain prominent without the oak dominating. Two months of lees contact add a touch of texture to the wine.\u003c\/p\u003e\u003cp\u003e In the glass, a pale straw yellow. On the nose, grapefruit, ripe lime, and a hint of pineapple, underpinned by a delicate vanilla note from the barrel aging. On the palate, lively acidity, medium body, and a smooth finish. John Platter awarded 3.5 stars to the 2019 vintage.\u003c\/p\u003e\u003cp\u003e Serving temperature 10–12 °C. Pairs well with grilled salmon, fresh goat cheese, or a chicken salad with mango.
