After pressing and fermentation of the grape must in modern stainless steel tanks, the traditional aging of the wines begins in approximately 600-liter wooden casks. Before the wine enters the casks, it is fortified with clear brandy to an alcohol content of 17% ABV. At this alcohol concentration, the yeasts die and settle at the bottom of the fermentation tanks. The subsequent maturation takes place using the so-called \u0026quot;Solera system,\u0026quot; named after the bottom row of casks in a pyramid-shaped barrel cellar. The amount of wine drawn from the Solera is replaced from the cask above, with the top row being replenished with fresh distillate.
