The grapes for Santa Digna Cabernet Sauvignon come from select vineyards in the Valle Central, the most suitable for this grape variety. Harvested at optimal ripeness from late March to early May, the grapes were immediately transported to the winery, where they were first crushed and then fermented in stainless steel tanks for seven days at controlled temperatures of around 25 to 28 °C. After a total maceration period of almost three weeks, the wines were carefully racked and transferred to French oak barrels, where they aged for six months. Finally, in May of the following year, they were bottled and released for sale.
