The three grape varieties were harvested at different times and therefore vinified separately. This allowed for individual attention to be paid to each variety during fermentation and maceration, highlighting its unique aroma and the softness of its tannins. The fermentation temperature never exceeded 25°C, and pump-overs were carried out with the utmost care. Syrah and Sangiovese underwent cold fermentation at 8°C before alcoholic fermentation to gently extract color and aromas. The wine underwent malolactic fermentation towards the end of October, with 15% then aged in barriques and the remainder in stainless steel tanks.
