The grapes for the Sancerre AOC grow on different terroirs: approximately 50% come from the calcareous-chalk soils of the Caillottes in Bué-en-Sancerre, 30% grow on the Terres Blanches, the highest elevation in the west of the appellation, where the soils are clay-limestone, and the remaining 20% ​​come from eastern Sancerre, from the famous silex soils of limestone and flint. All grapes are harvested, sorted, and vinified separately by parcel. The musts are spontaneously fermented in temperature-controlled stainless steel tanks without the addition of yeasts.
