The vines are 23 to 34 years old and yield 70 hl\/ha. Harvested by hand at the end of September. Fermentation takes place for 25 days in stainless steel tanks; there is no malolactic fermentation. The wine then matures for four months in stainless steel and one month in the bottle.\u003c\/p\u003e\u003cp\u003eOn the nose, acacia blossoms, peach, and lemon. Fresh and floral on the palate, with 5.00 g\/l total acidity and 13.5% vol. The minerality gives the wine length and structure.
