Today, Van Volxem cultivates over 80 hectares, many of them on steep slopes with old vines growing on weathered Devonian slate. The Schonfels vineyard lies directly on the Saar River near Wiltingen – a site with long growing seasons that allows the Riesling to reach maximum ripeness while maintaining a high acidity. The Grosses Gewächs (Grand Cru) is produced dry and aged in large wooden barrels.\u003c\/p\u003e\u003cp\u003e In the glass, it displays aromas of white peach and gooseberry, along with floral notes of chamomile and tomato blossom, and a delicate interplay of ginger and white pepper. The acidity is precise and concentrated, supported by a pronounced slate minerality that shapes the long, saline finish.\u003c\/p\u003e\u003cp\u003e Drinking window: 2025–2035. Serving temperature 10–12 °C.
