On the nose, it offers aromas of toasted wood and coffee, along with delicate notes of vanilla and cocoa. On the palate, it is warm and robust, yet remarkably harmonious and long-lasting. The grappa is made using grapes from vineyards around Vicenza. Freshly harvested, the grapes are delivered and distilled in copper pot stills using the traditional, discontinuous method. In this process, distillation is paused after each run to replace the spent pomace with fresh pomace. The art lies in discarding the heads and tails, reserving only the finest main portion with its rich aromas. The distillate is then aged for 13 years in 225-liter French Allier oak barrels, during which time Poli Barrique develops its characteristic aromas.
