The maceration in the lagares (barrel-aged wine cellars) is stopped at approximately 7% ABV by the addition of 77% pure wine distillate. The point at which the fermentation stops determines the remaining residual sugar, and thus the sweetness of the port wine. The port then matures in casks for at least two years; depending on the quality level, even up to six years.
