It is made from Merlot and Cabernet Sauvignon grapes, which, after a brief drying period with skin contact, are fermented for 16-18 days. Cellaring takes place partly in French oak barrels and partly in Slovenian oak barrels, followed by bottle aging. Perseo displays a deep ruby-red color with strong highlights. On the palate, it impresses with an intensely fruity flavor and hints of spice, derived primarily from the grapes and the oak barrel aging. A characteristic feature is its robust structure, which, as with a Ripasso, results from the natural drying of the grapes.
