The grapes for Montes Kaiken Ultra are gently fermented, and the young wine is then aged for twelve months in 100% French oak barrels. To preserve its original flavor as completely as possible, Kaiken is bottled only lightly filtered. Montes vinifies the Kaiken wines in a leased winery using grapes purchased from various vineyards in the Tupungato region of Mendoza. All suppliers were very carefully selected, and every stage of the winemaking process is overseen by Montes. Once the regions producing the best grapes have been identified, Montes may purchase its own vineyards in Argentina and build a winery.
