On the palate, it is both soft and powerful, with the delicate candied fruit and spice of the bouquet and elegant, gently matured tannins that give the wine a beautiful length in the finish. The grapes for Jean Leon Merlot are harvested from the beginning of September at optimal ripeness, immediately transported to the winery, and fermented here within three weeks at controlled temperatures in stainless steel tanks. After a maceration period of approximately 15 days, during which the grape skins extract a great deal of color, concentrated aromas, and soft tannins, the wines are carefully racked and aged for five months in 225-liter French oak barriques. They are then bottled at the end of April and released for sale after a further short rest. Soil: moist calcareous and clay soils on a limestone subsoil.
