For this project, he specifically looked for a new terroir in Tuscany and found it between Pisa and Volterra — in Terriciola, an area of the Maremma that is characterized by great Cabernet wines like Sassicaia. Rivetti consciously decided against the international mainstream and opted for Sangiovese: carefully selected clones, carefully selected sites, biodynamically farmed.\u003c\/p\u003e\u003cp\u003eIn the glass, the wine shows a fine interplay of dark berry fruit, coffee and leather. The structure is complex, the tannin imposing yet polished, the finish long with fine-grained acidity that gives the wine tension and freshness.\u003c\/p\u003e\u003cp\u003eServe it at \u003cstrong\u003e16–18 °C\u003c\/strong\u003e with Bistecca alla Fiorentina, braised wild boar or an aged Pecorino.
