Following gentle hand-harvesting in small crates, the grapes undergo extended maceration. Eighty percent of the harvest macerates for 18 days, while the remaining 20 percent macerates with wild yeasts for 25 days, both at controlled temperatures between 24-26°C. The must is then pressed and transferred to barriques, where malolactic fermentation takes place. The wine then matures for eight months in these new French and Caucasian oak barriques before bottling and further aging for six months before release. Color: Deep, dense purplish-red. Aroma: The nose offers the typical fruity and spicy aromas of southern Italian red wines. Notes of cherry jam and blackberry. Taste: On the palate, the \u0026quot;F\u0026quot; is very powerful and muscular. Present yet soft tannins harmonize with finely integrated acidity. The spicy aromas and fruity components are fully expressed.
